Breakfast buns - Scrambled eggs in a sweet bun



Yup the title says it all. These are the ultimate breakfast buns. Yummy tasty eggs from your girls encased in a sweet brioche like golden bun.

You can make them the day before and warm them up the next morning, but I warn you, they don't last long out of the oven!

The trick is to make firm scrambled eggs, with very little milk or cream. Alternatively, you could make an omelet square and wrap that in the dough.

Speaking of the dough, this is a sweet dough that goes really well with savoury or sweet fillings. In fact, you would find this sort of dough is Asian bakeries. It is slightly sweet, fluffy and moist. I've finally got all the proportions right with this dough.



The filling for this can be varied, in some, I added some bacon and I added some grated cheese to all of them (why not?). Just remember to season your eggs accordingly, depending on the extra fillings.

For the dough

450g bread flour
7g yeast
80g castor sugar
42g butter (melted)
1 egg
1/4 cup milk
1/2 cup water <-- The total milk and water volume should be 200ml
1 egg beaten for brushing

Egg filling

7 eggs scrambled and seasoned to taste
Bacon bits (optional)
Grated cheese (optional)


Mix all the dough ingredients together until the dough is smooth and elastic.

Cover and allow to proof. Alternatively, you can place it in the fridge to proof overnight. Take it out in the morning to warm up before working with it.

Roll out the dough to about 1/2cm thick and cut out approximately 15cm x 15cm squares


Place your scrambled eggs (and other fillings) in the centre.

Then fold the edges to meet in the centre. Pinch them together to seal


Brush with beaten egg and place someplace warm to proof. The beaten egg prevents the dough from drying out during the proof. You can re-coat them with egg if they look like drying out.

Pre-heat oven to 190 C

When the buns have proofed nicely (looking poofier), coat them with another egg wash and place them in the oven

Bake for  12 minutes

Remove and allow to cool slightly before devouring!

Makes about 6, actually, I can't quite remember, they went really, really quickly!
