Mini Chocolate Doughnuts
Adelaide opened up its first Krispy Kreme store the other day. I can't believe that there were people queuing up for hours in the cold and rain to get doughnuts. Two teenagers were even held up and their 6 boxes of doughuts stolen! Seriously Adelaide, they are just doughnuts! Find something else better to do with your time than queue up for doughnuts! For example, you can bake several batches of doughnuts in those hours and know exactly what goes in it. The below recipe is really tasty, is cheap and really quick to make.
These doughnuts are baked, but they taste very rich and moist and it's fairly easy to whip up. You can find the original recipe here, but this is what I have adapted. I used margarine instead of butter as it is winter here at the moment and it would have taken too long for the butter to soften.
Ingredients
Flour 60g
Almond Flour 20g
Baking Powder 1 tsp
Cocoa Powder 30gm I like it chocolately ^.^
Margarine 60g
Caster Sugar 70g
Egg 1 egg
Natural Yoghurt 2 tablespoons
1. Cream the margarine and sugar together until pale (I really like these little whisks. I think they are for cocktails, but they work well for small recipes!)
2. Add in the egg and keep whisking until it looks smooth
3. Add the yoghurt and whisk again until it looks smooth
4. Add in the dry ingredients
5. Mix until just combined
6. Grease your doughnut moulds. If you have silicone ones, lucky you! I just spooned them into my doughnut molds, this is probably the most time consuming process. you can pipe them into the molds, but I don't have a piping bag. Try and smooth the top out
7. Place into a preheated oven at 180 C for 7 mins and enjoy them when they are still warm!
For variations, I did add in toasted dessicated coconut. They taste like Coconut Rough chocolate doughuts.
